favorite gf recipes
here are some of my favorite every day gf recipes:
summer squash au gratin
- 1.25-1.5lbs summer squash
- 1 small onion or scallions
- olive oil
- 2/3 c grated cheese (any of your favorite kinds combined or whatever you have on hand)
- 1/3 c sour cream/yogurt
- 1 tsp ground coriander
- salt & pepper to taste
- salted butter
- gf bread crumbs
- parmesan cheese (optional)

-Preheat oven to 350 and lightly grease
a 10" baking dish.
Steam until tender (about 10 minutes) 1.25 lbs of yellow squash, cut into half inch cubes. Once steamed (don't overcook), place squash in a medium bowl, set aside.
-Cook in a small skillet until softened: one Tbl of olive oil, one half small onion or
a few scallions
-Add the onions to the squash with â…” cup of favorite grated cheese, â…“ cup of sour cream or yogurt, 1 tsp ground coriander, and salt and pepper to taste.
-Pour the mixture into a baking dish. Combine and sprinkle over top ½ bread crumbs and Tbl of butter. Optional add parmesan cheese here.
-Bake until bubbling and golden (about 35 minutes)

belgian waffles
1 C gf flour
1.5 T Baking Powder
1.5 Tablespoons Sugar
1/4 Teaspoon Salt
1/2 Teaspoon Cinnamon
2 Large Eggs Separated
1/4 Cup Vegetable Oil or melted butter
1 C whole milk
1 Teaspoon Vanilla Extract

mix dry ingredients
separate egg whites from yolks and beat until stiff peaks form, set aside
mix egg yolks, oil/butter, milk & vanilla then
add dry ingredients to wet and whisk to fully combine, then fold in egg whites (do not overmix)
